It was the famous writer and poet, Jose Gálvez whose wife Amparo Ayarez, was a great cook, who baptized this classic ‘Criollo’ dessert.

When they asked him what was his inspiration, he responded: "Because it is smooth and sweet as the sigh of a woman". In this case it is a woman from the city of Lima, a ‘Limeña’.

The fundamental ingredient of this exquisite dessert is "Manjar blanco" with which its base is prepared and is a sweetened milk, almost on the verge of caramel.
